Winter Vegetable Soup ~ serves 2-3

  • 1 onion
  • 1 carrot
  • 1 cabbage
  • 3 potatoes
  • Spanish sausage ~ chorizo (optional)
  • 2 spoons of olive oil, garlic, salt

Instructions

Chop the onions, carrots, cabbage, garlic and potatoes. Heat the olive oil in a large pan, add the onions and soften slightly, add the rest of the chopped vegetables, add 2 pints of seasoned boiling water and leave to simmer for 30 minutes. The cooking time can vary.

Blend roughly into soup, and serve with fresh bread!
